Garlic Scape Pesto

Earlier this week I scored a very large bag of scapes at our locale co-op for $0.99. I wasn’t sure what I was going to make with them when I purchased them, but as I walked to work with them in my bag I had visions of a very garlicky pesto.

In a food processor I placed enough trimmed scapes to fill the bowl 3/4 full. To which I added 3/4 cup of walnuts, 1 cup Romano cheese, the juice of half a lemon, salt and pepper to taste and 1/3 cup of olive oil. Pulse until well blended.

I wasn’t satisfied with the consistency so I placed 2 Tablespoons olive oil and 1/4 cup of water to the Vitamix and then placed the thick pesto on top. I pulsed at a speed of 7 until the mixture wouldn’t move on its own. I then used the tamper to move the mixture around until a smooth consistency is formed.

The final mixture didn’t turn out as bright green as I had anticipated but it tasted just as I had expected. So garlicky and delicious!
